Mini Egg Cookies

What do you get when you combine Easter candies and chocolate chip cookies??? How about these Mini Egg Cookies! They're soft, chewy and an easy treat that's perfect for spring.

No word of a lie though, these cookies are AMAZING. They have a perfectly soft texture with a gentle, buttery flavour. Combined with the delicious chocolate in the Mini Eggs, they are totally addictive. I was so excited to share them with the kids when they got home.


  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter softened
  • 3/4 cups sugar
  • 3/4 cups brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 1/2 cups Cadbury Mini Eggs chopped in half


  • Preheat the oven to 375F.
  • Combine the flour, baking soda and salt. Set aside.
  • In a large bowl, beat together the butter, sugar, brown sugar and vanilla until smooth and creamy.
  • Add the eggs and continue to beat until well combined.
  • Add the dry ingredients and continue to beat until the dough is mixed.
  • Add the mini eggs to the dough and gently stir until they're mixed into the dough.
  • Drop spoonfuls of the dough onto a parchment lined baking sheet.
  • Bake at 375F for 10 to 12 minutes or until edges become golden.

Store cookies in an airtight container at room temperature for up to 4 days.

There’s a few different brands of candy coated eggs you can buy around Easter time. I’m biased towards the Cadbury Mini Eggs because I think they are amazing. I think the M&M type eggs would probably be good too. But it’s all about the good chocolate. Don’t skimp out and buy the cheap brands thinking they’ll taste the same.
