Need a dessert idea for Passover? I have a great recipe for you! Easy to make with the kids and delicious and elegant enough to serve with guests at the Seder. I’ve been making this Icebox Matzo Cake for many years and it is always a hit in my house. In fact, I make it all year round.
The chocolate cream has a lot of flavors and combined with the wine and matzo, it creates a happy marriage of flavors and textures in your mouth. Of course, if you’re serving to kids, use grape juice instead of wine.
If you don’t celebrate Passover, still give this recipe a try. It’s super delicious.
Ingredients
- 1 cup butter or margarine (2 sticks) melted
- 1 cup sugar
- 2 eggs
- 6 oz semi-sweet chocolate
- 1 teaspoon rum extract optional
- 1 teaspoon milk or soy milk
- 1 teaspoon prepared coffee
- 1 1/2 boxes Matzos
- 2 cups Kosher wine or grape juice placed in a shallow dish
I made this last year for a birthday party at a Jewish home during Passover. It was an amazing and welcome hit. It is so beautiful as you cut into it. It also is incredibly easy which is right up my alley.
