Egg Potato Muffins

Egg Potato Muffins. Delicious, savory and only requires 6 ingredients. This recipe is perfect for breakfast, brunch or as a side dish.


  • 5 free-range eggs
  • 2 medium yellow russet potatoes peeled and finely diced
  • 2 tbsp fresh chives finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil
  • Required Tools: Muffin tin and Silicone Muffin Cups


  • Preheat oven to 425 degrees F.
  • In a medium size bowl, whisk together all your ingredients. Using a 1/4 measuring cup, scoop batter into greased muffin tray. Bake for 25 minutes until golden brown. Enjoy!

These muffins will store well in an air tight container up to 4 days in the fridge.
