- 2 medium yellow russet potatoes peeled and finely diced
- 2 tbsp fresh chives finely chopped
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp avocado oil
- Required Tools: Muffin tin and Silicone Muffin Cups
These muffins will store well in an air tight container up to 4 days in the fridge.
