These stuffed peppers are amazing. If you’ve never been a pepper fan, please reconsider. I am not a huge pepper lover. But these things are delicious. They will make perfect party appetizers.
Ingredients
- 6 large banana peppers
- 1 cup 4 oz shredded sharp Cheddar cheese
- 3 oz cream cheese
- 1 small tomato diced
- 1/4 cup diced onion
- 1/2 small green bell pepper diced
- 1 jalapeño pepper diced
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 6 thick cut bacon slices
Banana peppers are in season so stock up at your local produce stand or farmers market. Look for large banana peppers, 6-7″ in length. They will be much easier to stuff.

Banana peppers are excellent stuffing peppers. They’re just big enough to hold whatever stuffing you’re in the mood for. The pepper walls aren’t very thick, yet they offer a bit of sweet crunch when eaten raw, and soften up nicely during the cooking process.
