Berry White Chocolate Pie

White Chocolate Frozen Mixed Berry Pie is a sweet combination of your favorite summer berries whipped up in a graham cracker crust with a white chocolate drizzle.

 

A perfectly beautiful pie doesn’t matter unless it’s also crazy delicious and this frozen mixed berry pie with a graham cracker crust is everything good about summer. Especially when it’s summer and you need something frozen to cool off.

And just look how gorgeous it is but your secret is that there’s a very short ingredient list.

Ingredients

  • 10 Graham Crackers Crushed into crumbs
  • 1/4 Cup Sugar
  • 1/4 Cup Butter melted
  • 6 oz Chocolate white, chopped
  • 1 1/4 Cups Cream heavy, whipping, divided
  • 1 1/2 Cup Mixed Berries frozen, thawed

Preparation

  • Mix graham cracker crumbs, butter and sugar and pat into a 9” pie crust. Bake at 350 for 8 minutes and remove to cool.
  • In a saucepan, heat chocolate and 1/4 cup Cream over low heat, stirring often, just until chocolate is melted.
  • Pour 2 tbsp of the melted chocolate mixture into pie crust and gently spread chocolate evenly inside crust. Refrigerate until set.
  • Cool remaining chocolate mixture only slightly so it’s not set.
  • Set 1 Tablespoon of the chocolate mixture aside for the topping. In a blender, puree remaining chocolate mixture and thawed berries with any juices until smooth.
  • Whip remaining Cream just to stiff peaks then fold into the berry mixture.
  • Spoon berry mixture into pie crust and smooth top. Warm reserved chocolate mixture gently if necessary; drizzle over top of pie. Refrigerate for at least 1 hour, until set or for up to 1 day

Notes: This pie can be kept in the freezer for 2 weeks.

There are a lot of different ways to garnish a frozen pie, but I tend to love a really fresh and natural looking pie, so berries are my top pick. In case you want a list of ideas, here’s a few more.

Can You Buy Graham Cracker Crumbs Instead of Making Them?

Yes, buying graham cracker crumbs will work just fine. The only reason I don’t do this is that I love a little more texture in my pie crust and freshly ground graham cracker crumbs are more flavorful.

How Long Will a Frozen Pie Keep?

Wrap your pie carefully in saran wrap and it will keep in the freezer for another two weeks.

Unfortunately a frozen pie will begin to form ice crystals just like a tub of ice cream. Because of this you’re not going to want to keep it for too long.
